Rosalie Harrington of Beverly Farms, who for more than 25 years owned a restaurant in Marblehead, shops for fresh ingredients for her entry in the eighth annual Seafood Throwdown Thursday at the Cape Ann Farmers Market at Stage Fort Park in Gloucester. Harrington and her opponent were given $25 and 15 minutes to find ingredients only moments after learning the identity of this year's fish: the dogfish, also known as cape shark. Harrington's entry in the contest -- grilled dogfish stirred in with sauteed vegetables herbs and served corn fritters and dogfish liver pate -- beat out her opponent, Gloucester chef Paolo Laboa, who prepared a risotto, a traditional Italian rice dish, with dogfish broth, along with sauteed dogfish in a traditional Liguarian style recipe with vegatables and herbs. Laboa, who will open a restaurant in downtown Gloucester this October in the old Alchemy space, was assisted during the contest by his wife Mercedes. Harrington was assisted by her culinary student Tom Janis of Gloucester.
